Bruegger's bagels are formed from fresh dough and kettle boiled before they are baked. Then we bake them in a stone hearth, not on a rack, so they bake evenly. That gives them that authentic, almost-crunchy crust on the outside and a dense, chewy texture on the inside. It's such a satisfying combination to sink your teeth into!
Our bagels are baked just before you walk in the door, not just once a day before you wake up. That means you will almost always find a bagel flavor you want that is fresh and warm right from our stone hearth oven. We're fanatics about the quality of our bagels, so you won't find any cracked crusts, flat bottoms, blisters or burnt spots on them. If the bagels aren't just right, we don't serve them. Bruegger's cream cheese is made from a secret recipe, and it truly is fresh from the farm! Our own manufacturing process in the renowned dairy state of Vermont provides the freshest cream cheese available, starting with the finest cream. You won't find a smoother, creamier cream cheese anywhere. Whether you enjoy one of our tempting cream cheeses spread on a warm bagel on your way to work, or take a tub home with your next dozen bagels, you know you'll be experiencing the very best quality and taste.
Of course, it all starts with those Vermont cows, but next we make sure our cream cheese is chock full of great ingredients - chunks of hand-chopped vegetables in the Garden Veggie, pure honey and crunchy walnuts in our Honey Walnut, bits of berries in our Strawberry, cool crunchy cucumbers and tangy dill in Cucumber Dill.
To get a little bit technical, we make our cream cheese using a special proprietary process called "direct set," which means we use natural organic acids to "directly" set the cheese. Other cream cheeses use bacterial cultures to produce the acids that set the cheese. Our method produces no whey byproducts and allows us to add our ingredients at a much lower temperature, which maintains better consistency, texture, color, flavor and nutritional value.
